Chicken Main Dish Recipe

Whether you prefer poultry, tuna, or just a simple meal,

these quick and easy dishes are sure to please.

We would like to share some of our favorite main dish recipes.

Chicken & Rice

1 13-ounce can chunk white chicken
1 can cream of chicken soup
2 10-ounce packages of yellow rice

Mix above ingredients into 4-quart pot.

Add water according to rice packages plus 1/2 cup extra.

Cook over medium-low heat stirring often until done.

Add more water if needed to finish cooking.

Meatloaf Surprise

(This recipe was inspired by the fact that our daughter hated vegetables and this was a way to get her to eat them.)

1-1 1/2 lb ground beef
1 can french onion soup
2 eggs
1 cup finely grated cabbage
1 cup finely grated carrots
1 tsp salt free seasoning
pepper to taste

Glaze:
1 cup ketchup
1/4 cup brown sugar
1-2 TBSP yellow mustard

Combine ground beef, french onion soup, eggs, cabbage, carrots, seasoning, and pepper in a large bowl and mix well.

Shape into loaf in a 9 x 13 baking pan.

Bake un-covered at 350 degrees for 45 minutes.

Mix ketchup, mustard and brown sugar together.

Spread over loaf and bake another 20-30 minutes or until done.

Tuna Casserole

1 can tuna
1 can of cream of mushroom soup
1 can garden peas (drained)
3/4 cup crushed potato chips

Combine tuna, mushroom soup and garden peas together in a casserole dish.

Cover with crushed potato chips.

Bake at 350 degrees for 30 to 45 minutes until bubbly and chips begin to brown slightly.

Corn Casserole

1 can whole corn, drained
1 can creamed corn
1 egg
1 (8 oz) sour cream
1 stick melted butter
1 box corn muffin mix

Heat oven to 350 degrees.

Mix all ingredients in a 2-quart casserole dish.

Bake for 40 minutes.
