Here is a substitution chart that is used regularly in our home.


SUBSTITUTION CHART

1 TBSP CORNSTARCH - 2 TBSP FLOUR

1 CUP SIFTED ALL PURPOSE FLOUR - 1 CUP PLUS 2 TBSP CAKE FLOUR

1 CUP CAKE FLOUR - 7/8 CUP ALL PURPOSE FLOUR

1 SQUARE CHOCOLATE (1oz) - 3 or 4 TBSP COCOA PLUS 1 TBSP SHORTENING (OR MARGARINE OR BUTTER) or 3 TBSP SEMISWEET CHOCOLATE CHIPS

1 ENVELOPE (1OZ) PRE-MELTED UNSWEETENED CHOCOLATE - 3 TBSP COCOA PLUS 1 TBSP OIL OR MELTED SHORTENING

1 TSP BAKING POWDER - 1/4 TSP BAKING SODA PLUS 1/2 TSP CREAM OF TARTAR

1 CUP SOUR MILK - 1 CUP MILK PLUS 1 TBSP VINEGAR OR LEMON JUICE

1 CUP CREAM (HEAVY, SOUR) - 1/3 CUP BUTTER PLUS 2/3 CUP MILK

1 CUP CREAM (THIN, SOUR) - 3 TBSP BUTTER PLUS 3/4 CUP MILK

1 WHOLE EGG - 2 EGG YOLKS PLUS 1 TBSP WATER

1 CUP MILK - 1/2 CUP EVAPORATED MILK PLUS 1/2 CUP WATER

1 CUP HONEY - 3/4 CUP SUGAR PLUS 1/4 CUP LIQUID

4 TO 6 LEMONS - 1 CUP LEMON JUICE

1/8 TSP GARLIC POWDER - 1 SMALL CLOVE GARLIC

1 CUP YOGURT - 1 CUP BUTTERMILK or 1 CUP SOUR CREAM

1 CUP BUTTERMILK - 1 TSP LEMON JUICE or VINEGAR PLUS ENOUGH MILK TO MEASURE 1 CUP

3/4 CUP CRACKER CRUMBS - 1 CUP BREAD CRUMBS

1 CUP MOLASSES - 1 CUP HONEY

1 TBSP INSTANT MINCED ONION - 1 SMALL FRESH ONION or 1 TBSP ONION POWDER

1/4 CUP CHOPPED FRESH PARSLEY - 1 TBSP DRIED PARSLEY FLAKES

1 TSP DRY MUSTARD - 1 TBSP FRENCH'S YELLOW MUSTARD

1 POUND FRESH MUSHROOMS - 6 OZ CANNED MUSHROOMS

1 CUP DARK CORN SYRUP - 3/4 CUP LIGHT CORN SYRUP PLUS 1/4 CUP MOLASSES or 1 CUP LIGHT CORN SYRUP

1 CUP LIGHT CORN SYRUP - 1 CUP SUGAR PLUS 1 CUP LIQUID

1 TSP GARLIC SALT - 1/8 TSP GARLIC POWDER PLUS 7/8 TSP SALT

1 CUP HALF AND HALF CREAM - 1 TBSP MELTED BUTTER PLUS ENOUGH WHOLE MILK TO EQUAL 1 CUP

1 TSP LEMON JUICE - 1/4 TSP CIDER VINEGAR

1 TSP LEMON PEEL - 1/2 TSP LEMON EXTRACT

1 CUP SUGAR - 1 CUP PACKED BROWN SUGAR or 2 CUPS SIFTED CONFECTIONERS' SUGAR

1 CUP TOMATO JUICE - 1/2 CUP TOMATO SAUCE PLUS 1/2 CUP WATER

2 CUPS TOMATO SAUCE - 3/4 CUP TOMATO PASTE PLUS 1 CUP WATER
