FRYING FOODS

On the occasions we fry foods, we use a basic coating mix.

There are several variations to the basic instructions that can be used.

Some are included as well as a tuna patty recipe that we enjoy.

Basic Coating Mix
(for chicken, pork chops, squash, green tomatoes, etc.)

1 cup self rising flour
1 1/2 tsp salt
1/4 tsp black pepper

cooking oil

Place all three dry ingredients in a gallon size plastic bag. Shake to mix.

Add the food items you plan to fry. Seal the bag.

Shake and coat evenly with the flour mixture.

Remove and place in hot oil.

Variations include using 1/2 cup self rising flour and 1/2 cup self rising corn meal.

Or, using 1 cup self rising corn meal only depending on foods being cooked and preferences.

1/2 tsp garlic salt can be used in place of regular salt if desired.

Thick Crust Batter
Whisk together 1 egg and 1/2 cup milk.
Add 1/2 cup self rising flour, 3/4 tsp salt and 1/8 tsp black pepper.
Mix well.
Dip food items into batter and place in hot oil.


Tuna Patties
2 cans chunk tuna in water (do not drain)
1 sleeve crushed saltine crackers
2 eggs
4 tsp lemon juice
1/2 tsp onion powder
enough water to moisten without being soupy
1/2 tsp salt
1/4 to 1/2 tsp black pepper

Mix all ingredients together will.

Shape into patties and cook until golden brown.

Easy Corn Fritters
(squash, okra, etc. can be used also)
2 cups hush puppy mix

Mix according to package directions.

Add 1 cup whole kernel corn

Mix well.

Drop rounded teaspoonfuls of mix into pan of hot cooking oil cooking until a golden brown on all sides.

Corn Fritters

1 1/3 cup all purpose flour
1 egg
3/4 tsp baking powder
2/3 cup milk
1 tsp baking soda
2/3 cup cream style corn
1/4 tsp salt
1/3 cup whole kernel corn
2 Tbsp sugar


Stir together flour, baking powder, baking soda, salt and sugar.

Beat the egg and milk enough to blend.

Add dry ingredients,cream corn and whole kernel corn to egg and milk mixture.

Stir only until dry ingredients are moistened.

In a large skillet, heat oil until approximately 375 degrees.

Drop by heaping Tbsp into hot oil.
