Chicken Pot Pie

Crust
1 cup chicken broth
3/4 cups cooking oil
3 cups self rising flour

Boil broth and oil together on medium heat in a medium saucepan.

Remove from stove and add flour.

Mix together well and divide in half.

Take one half of crust mixture and press into bottom and sides of 9 x 13 baking dish.

Reserve the other half for the top crust.

Filling

1 15 oz can chicken (2 cups cooked chicken)
1 can cream of chicken soup (fat free can be used)
2 cans mixed vegetables or 1 can vegetables and 2 cups yellow squash
(use the juice from one can vegetables and drain the other can)

Mix together chicken, soup and vegetables.

Pour into the baking dish over bottom crust layer.

Use remaining crust mixture to make top crust.

Bake at 325 to 350 degrees until crust is lightly browned. (Approximately 30 - 45 minutes)

Alternate Crust
3 cups baking mix
1 1/2 cups chicken broth

Mix both ingredients together.

Divide in half.

Use one half for bottom crust and one half for top half.

Taco Pie
1 lb ground beef - browned and drained
1 can fat free refried beans
1 package taco seasoning
1 16 oz can tomato sauce
1 1/2 cups cheddar cheese
1 cup crushed corn or tortilla chips
1 can shoepeg corn (optional)
8 oz sour cream

Mix all ingredients except the sour cream together.

Makes two 9 inch pies. One pie can be frozen for later use if desired.

Pour into a pie crust.

Bake at 350 degrees for about 30 minutes or until done.

Cool for 15 - 20 minutes. Slice and serve with sour cream topping.

Pie Crust
(makes 1 crust)
1/3 cup cooking oil
1/4 cup water
1 cup self rising flour

Boil oil and water together over medium heat.

Add flour and mix.

Press into bottom and sides on 9 in pie pan.

Crab Cake Pie

1 lb crab meat - crumbled
1 sleeve saltine crackers
1 cup milk
3 eggs
1/4 cup mayonnaise
3 tbsp mustard
1 tsp seafood seasoning
1/4 tsp celery salt
1/4 tsp paprika
1 tbsp onion flakes
1/4 tsp black pepper

Mix all ingredients together.

Add bread slices if too soupy.

Bake at 350 degrees for approximately 30 to 45 minutes or until done.
